Nightfall Andouille Sausage (loose or links)
Veggies: Bell pepper, onion, garlic, celery
Seasonings
Chicken broth from Nightfall chicken

Lucky day - -  black  eyed  pea  soup

Make every day luck with this simple black-eyed pea and ham hock soup.

Ingredients:
Veggies: carrots, onions, celery, garlic, diced tomatoes, kale
Ham hock or leftover ham from Nightfall
1lb black eyed peas
Chicken broth from Nightfall chicken
Seasonings: Paprika, bay leaf, thyme, etc

easy  Pulled  Pork  in  the  instant pot (or crock pot) 

From Liz and Nate's kitchen...This recipe is our go to for super simple dinners.

Ingredients:
Nightfall Pork Roast (shoulder, Boston butt, or loin)
Garlic
Onion
Salt
Pepper
Chicken Broth (recipe using a Nightfall whole chicken is here, in case you're rusty or new to broth!)...or just water

Pulled pork is versatile...make BBQ pulled pork sandwiches (my favorite) or get more creative by using the meat in Thai stir fries, Chinese dishes, or....well, just check out this list of ideas.

1 lb Nightfall Farm ground pork
Garlic, ginger, salt, pepper, sesame seeds, fish sauce, and lime

HOLIDAY  HAM (IN THE Slow  cooker)

This is so darn good AND easy! A couple of Pro Tips based on cooking this last week:
1. Our hams are cured (nitrate free!) but NOT cooked. Lots of recipes are for pre-cooked hams, so if you go looking for something else, be aware of that!
2. Our hams are BIG (7-10lbs). This recipe is for a 2-3lb ham, so I cut ours in half, put half in the crockpot and half in the instant pot, and did the full seasoning/broth/juice etc recipe (below) for each half.
3. Cook time: The recipe has some options. I really liked cooking it on High for 3-4 hours, and then being sure my internal temp was good. It was almost tender enough to cut with a fork (and in fact some of it was!). YUM.

White Wine
Honey
Mustard
Black pepper

holiday  ham  (GLAZED,  IN  THE  OVEN)

Perfect for the oven. Choose from either of these tasty recipes:

Option 1. Super simple.

Ingredients:
10lb Nightfall Ham
Salt
Sugar
Oranges
Black Pepper
Thyme
Rosemary
Water
Wine

Apple  fennel  breakfast  sausage

Recipe from CSA member Heather Holland. Tip from Heather: save the rendered fat for garlic-infused lard.

Ingredients:
1lb Nightfall ground pork
Fennel seeds
apple
Maple syrup
Seasoning: garlic and onion powder, paprika, sea salt, sage, red pepper flakes, rosemary, black pepper
Butter

1. Toast fennel seeds.
2. Mix all ingredients except butter.
3. Divide sausage mixture into 8 patties.
4. Melt butter and cook up sausages.
5. Enjoy!
