Ham & Cheese Frittata

Ingredients:
14 Nightfall Farm eggs
1 c milk
1 bell pepper diced (red at Christmas)
1/2 onion diced
2 c diced Nightfall Farm ham
2 c shredded cheese (your choice)
Salt and pepper to taste
Option: other veggies, depending on the season
Directions:
1. Preheat oven to 350° F.
2. In a large bowl, beat together eggs and milk.
3. Add in all other ingredients.
4. Grease a 9x13” glass pan. Pour in frittata mixture
5. Bake at 350° for 45 minutes.

Mini Quiche Appetizers

Ingredients:
Your favorite 10” pie crust 4 eggs
½ c cooked sausage, flavor of your choice ¾ c whole milk
¼ c cheddar cheese, shredded Optional: pinch cayenne pepper
1 large green onion, minced
OR 4 T chives OR ½ c. diced onion
Directions:
1. Make your favorite 10” piecrust. Roll out dough, cut (6) 4” circles. Lightly grease muffin pan. Gently position crusts in muffin cup.
2. Melt butter in small sauté pan. Add onion, sauté until translucent.
3. In a small bowl, mix onion and warmed-up (pre-cooked) sausage.
4. In a separate bowl, whisk eggs and milk. Season with salt and pepper (and cayenne if you’re feeling adventurous).
5. Spoon sausage and onion into each cup.
6. Distribute egg mixture evenly into each cup.
7. Bake at 375° for about 20-25 minutes or until eggs are completely set. Let rest 5 minutes before removing quiches to serve. Enjoy!

Sausage, leek, and asparagus Dill breakfast Casserole

Ingredients:
1lb ground Nightfall pork (or the sausage flavor of your choice!)
Leek
Asparagus
8 Nightfall eggs
Heavy cream
Dill
Garlic powder
Salt and pepper to taste
Lard/butter/cooking oil

2. Saute breakfast sausage until half done.
3. Add leaks and asparagus until pork is cooked.
4. In medium bowl, mix eggs, cream, dill, salt and peper.
5. Pour mixture into an 8x8" baking dish. Add sausage mixture.
6. Bake 35-40 minutes, until eggs are done.
7. Enjoy!
