Asian-style  meatballs  (Or  burgers)

Ingredients:
1 lb Nightfall Farm ground pork
Garlic, ginger, salt, pepper, sesame seeds, fish sauce, and lime

Slow  cooker  / crock  pot  ham

Two CSA members have been telling us about crock-potting ham, and we were intrigued. Here's the scoop.

Ingredients:

Nightfall Ham
Chicken Broth from a Nightfall Chicken
Orange Juice
White Wine
Honey
Mustard
Black pepper
Cloves
Salt and pepper

Glazed  holiday  ham

One of our favorites!

Nightfall Ham
Cloves
Mustard powder
Brown sugar
Sherry

Meat-ZA

Ingredients:
Nightfall ground pork                                                Ground beef from a local farm
Nightfall eggs                                                                 Thyme, oregano, onion powder, salt, 
Garlic cloves                                                                    Your favorite pizza sauce
Olives                                                                                   Red onion
Feta

This one takes some time, but is a great alternative if you're going no/low-gluten.

Apple  fennel  breakfast  sausage

Recipe from CSA member Heather Holland. Tip from Heather: save the rendered fat, if not too salty for garlic-infused lard.

Ingredients:
1lb Nightfall ground pork
Fennel seeds
apple
Maple syrup
Seasoning: garlic and onion powder, paprika, sea salt, sage, red pepper flakes, rosemary, black pepper
Butter

1. Toast fennel seeds.
2. Mix all ingredients except butter.
3. Divide sausage mixture into 8 patties.
4. Melt butter and cook up sausages.
5. Enjoy!
